Split the bean lengthwise, scrape out the seeds with the tip of a knife, and drop the bean and seeds into your hot preparation (milk, cream, syrup). Leave to infuse. Retrieve the bean, rinse it, dry it and reuse it.

Bourbon (Vanilla planifolia): the classic, fine, sweet, balanced. Ideal for baking and desserts.

Pompona (Vanilla pompona): XXL, more floral and woody, with a warm fragrance. Great for spiced rums and long-infusion recipes.
