Our family grows and cures this Bourbon vanilla (Planifolia variety) in the SAVA region of north-east Madagascar. The beans are selected one by one for their suppleness, their sheen and their aromatic richness, at direct-from-producer prices, with no middlemen.

Notes aromatiques

Classic profile of quality Madagascar Bourbon: cocoa / prune / blond tobacco opening, buttery milky heart, long woody finish. Natural vanillin content around 1.8 to 2.2%. Persistence exceeding a minute. For professional volumes, batch to batch consistency is our main commitment · you should be able to repeat the same recipe week after week without recalibrating. This is why we test every batch before shipping (flexibility, moisture content, aromatic intensity).

Conseils d'utilisation
  • Vanilla ice cream (10 L of mix): 12 to 15 beans, split and scraped. Seeds blended into the mix before churning.
  • Pastry cream for service (5 L): 6 beans, 30 min covered infusion, beans removed and dried for a second use as vanilla sugar.
  • Cannelés (200-piece production run): 4 beans for 5 L of batter.
  • Savory service / banquets: ¼ bean per portion of scallops or poultry in coconut milk.
  • Punch / bar infused rum: 1 bean per 50 cl of maceration.

With 100 beans, you cover roughly 6 to 12 weeks of intensive production depending on your menu. We can also prepare custom packaging on request (vacuum-sealed, bags numbered by week).
