Grade A gourmet black Bourbon vanilla beans from Madagascar, grown and cured by our own family in the SAVA region, with no auction middlemen. The signature grade of pastry chefs: supple, oily, glossy beans with 0% splits (category I of the NF ISO 5565-2 standard).

Origin & terroir
Our family grows and cures these beans in the SAVA region (Sambava), in north-eastern Madagascar, bypassing the auctions. Each lot undergoes a slow 3 to 6 month curing in wooden trunks under controlled temperature and humidity, with bean-by-bean gauge sizing (14 / 16 / 18 cm and above), manual sorting and visual and UV inspection.
Tasting & uses
Unsplit, supple, oily and glossy beans. Vanillin content of 1.4 to 3% (HPLC, contractual guarantee of at least 1.4%, selected SAVA lots typically 1.9 to 2.4%), moisture of 30 to 38% (Karl Fischer).
Target uses: high-end pastry, fine dining, hotels, ice cream makers, chocolatiers, premium retail repacking.
Storage
36 months vacuum-sealed, in a cool place away from light.

- Food-grade PE/PA vacuum packs (250 g, 500 g or 1 kg depending on volume), protected from light
- 5 kg food-lined cartons for intermediate volumes
- Each lot ships with: phytosanitary certificate (DSAVA Sambava), certificate of origin (Antalaha Chamber of Commerce), independent laboratory analysis (vanillin by HPLC, moisture by Karl Fischer; size distribution and split rate on request) and Madagascar export customs declaration
France stock (Bessan, Hérault): ships within 48 hours up to 100 kg. Above 100 kg, shipping is coordinated from Madagascar: a member of our team calls you after your order to confirm lead times and documents. Delivery included, payment by card or bank transfer.
