Origin & terroir
Our family grows this vanilla in the SAVA region, in north-eastern Madagascar. The beans are prepared in our own warehouse in Sambava, in the heart of that same region. Graded to the NF ISO 5565-2 standard, gauge-sized and manually sorted.
Tasting & uses
Vanillin content of 1.4 to 3% (HPLC, contractual guarantee of at least 1.4%), moisture of 30% maximum (Karl Fischer), 50% split and 50% closed beans.
Target uses: extraction (extracts, natural flavors), syrups, vanilla dairy formulations (yogurts, dairy desserts, industrial ice cream).
Storage
36 months vacuum-sealed.
