This chilli develops a vivid, clean heat, with a quick attack, carried by fruity, slightly smoky notes. Traditional drying preserves its scent and character. A powerful yet legible chilli, which lifts a dish without overwhelming its other flavours.

How to use
  • Sakay maison: rehydrate and blend to prepare the traditional Malagasy chilli sauce.
  • Marinades: add whole or crushed to season meat and fish.
  • Slow-cooked dishes: add at the start of cooking, it infuses slowly without dominating.
  • Rice and stir-fries: a touch is enough to add character to everyday dishes.
