Voatsiperifery grows wild on climbing vines in the forests of Vangaindrano, in south-eastern Madagascar. Our family harvests this pepper itself: picking is entirely done by hand, drying is carefully controlled and the berries are hand-sorted, all on our own. No middlemen between our land and your kitchen: full traceability, optimal freshness and a fair price.
Tasting & uses
Woody, resinous notes with a hint of citrus and menthol: less pungent than classic black pepper, yet highly aromatic. It pairs beautifully with grilled meats, fish, vegetables, fine sauces and desserts with chocolate or exotic fruits.
- Marinades: 1 teaspoon of crushed pepper for 4 people.
- Gentle cooking: add at the end of cooking to preserve the volatile aromas.
- When plating: crush or grind just before serving.
- Desserts: a pinch over chocolate, pineapple or pan-fried fruit.
Pairs well with Bourbon vanilla, ginger or kaffir lime (combava).
