Yoghurt and curry marinated chicken
Chicken marinated in a Madagascar curry, ginger and lemon yoghurt, then baked: a simple marinade that tenderises and flavours the meat.

Here is our version of a dish that came from India by way of English cooking: chicken coated in a spiced yoghurt before being baked in the oven. The yoghurt tenderises the meat while the curry, prepared in Vangaindrano, in south-eastern Madagascar, and the ginger flavour it deeply.
The marinade takes just a few minutes to make; it is the resting time in the fridge that makes the difference between a chicken that is merely seasoned and one that is truly flavoured.
Preparation

In a large bowl, mix the yoghurt, curry, ginger, crushed garlic, lemon juice, oil, black pepper and salt.

Make a few light incisions in the chicken in two or three places so the marinade can penetrate, then coat it entirely in this mixture.

Cover and leave to marinate in the refrigerator for at least 2 hours, overnight if possible.

Preheat the oven to 200°C.

Place the chicken and its marinade in an oven dish. Bake for 20 to 25 minutes, turning the pieces halfway through, until the chicken is nicely browned and cooked through.

Serve with rice or a salad.
The little extra that changes everything
The longer the marinade rests in the refrigerator, the more the yoghurt tenderises the meat and the deeper the spices penetrate: a whole night gives a better result than a 30-minute marinade.
