Mulled Wine with Madagascar Spices

This mulled wine brings together three spices from Madagascar: cinnamon, cloves and vanilla. Our family grows vanilla in the SAVA region, in the northeast of Madagascar. It grows cinnamon and cloves in Vangaindrano, in the southeast of Madagascar.
The idea: let the spices infuse in the wine as it heats gently, without letting it boil. This recipe is made in a single saucepan and served warm, in heat-resistant glasses. Alcohol should be consumed in moderation.
Preparation

Peel 3 strips of orange zest with a peeler, then squeeze the orange.

Split the Vanille Désiré vanilla pod lengthways, without scraping out the seeds.

Pour the wine, sugar, orange juice and zest into a saucepan. Add the Vanille Désiré ground cinnamon, the Vanille Désiré cloves and the vanilla pod.

Heat over low heat for 10 to 15 minutes, until steam rises, without letting it boil.

Turn off the heat, cover and leave to infuse for 10 minutes.

Strain and serve warm in heat-resistant glasses.
The little extra that changes everything
Heat over low heat and watch the saucepan: if the wine simmers, the spice aroma turns heavy and the taste of the wine hardens.
