Vanilla Scones with Vanilla Sugar
Warm, golden scones that are easy to make again, with a clean vanilla that makes brunch more polished without complicating the process.
We keep a very simple format, but push precision on texture and finish to get a scone that opens well, spreads well and stays elegant even served plain.
Ingredients
Scone dough
- 300 g flour
- 2 tsp baking powder
- 1 pinch fine salt
- 40 g Bourbon vanilla sugar
- 75 g cold butter
- 1 egg
- 12 cl whole liquid cream
- 0.5 Bourbon vanilla bean
Preparation
- Rub in the dough (6 min)
Mix the flour, baking powder, salt and vanilla sugar, then rub in the cold butter with your fingertips. - Add the egg, cream and vanilla (5 min)
Add the egg, the cream and the vanilla seeds. Mix just enough to form a soft dough. - Shape and cut (6 min)
Roll out the dough without overworking it, then cut thick scones to keep a nice height. - Bake until colored (12 min)
Brush lightly with cream and bake until you get scones that are risen and nicely golden.
What to expect
Tender, golden scones, with a discreet but very pleasant vanilla, easy to serve with simple accompaniments.
Mistakes to avoid
A dough that is overworked or too wet gives flat scones. Keep a brief touch and a dough that is still soft.
Serving
They are best the same day, still warm, with a red fruit jam or a little salted butter.
Tips
- Technique: Work the dough as little as possible to keep a light, crumbly texture.
- Serving: Serve them still warm with butter, thick cream or a light jam.
Recommended Vanille Désiré products
The bean gives the aromatic backbone, and the vanilla sugar carries the final touch at serving time or when the scone is opened.
FAQ
- Can they be prepared without cream?
- Yes, but the cream brings a more tender, more even crumb.
- Can raisins be added?
- Yes, in a small amount to keep the vanilla clearly readable.
