Spiced hot cider

This hot cider gently infuses ground cinnamon, whole cloves and orange zest, never boiling, so as to keep the cider's slight sparkle.
Dry cider is an alcoholic drink; this hot preparation is for adults only. Madagascar cinnamon and cloves bring their flavour to the whole. Our family grows this Ceylon cinnamon and these cloves in Vangaindrano, in south-eastern Madagascar.
Preparation

Wash the orange, peel off the zest in wide strips and cut the fruit into rounds.

Pour the cinnamon powder into a tea filter or a square of muslin, and close it so it does not infuse as loose grains in the glass.

In a saucepan, pour the cider, add the cloves, the cinnamon sachet, the zest and orange rounds, and the brown sugar.

Heat gently for 10 to 15 minutes, without boiling, to keep the aromas and the cider’s slight sparkle.

Taste and adjust the sugar if needed.

Remove the cinnamon sachet, cloves and orange rounds before serving nice and hot, in heat-resistant glasses.

Do not let the cider boil: gentle heating preserves the spices’ aromas and the drink’s slight sparkle. Like any cider, this hot version remains an alcoholic drink, for adults only.
