Roasted Sweet Potato with Vanilla & Makrut Lime

Roasted sweet potatoes, glossy and tender, lifted with vanilla and combava for a very distinctive side dish that is still easy to love.

Here the vanilla acts as a background note. It rounds out the sweet potato, while the combava keeps the dish taut, fresher and much more readable at the table.

Ingredients

Roasted vegetables

  • 900 g sweet potatoes
  • 3 tbsp neutral oil
  • 1 Bourbon vanilla bean
  • 0.5 tsp combava powder
  • 0.25 tsp Madagascar cinnamon
  • 1 tsp fine salt
  • 2 pinches black pepper
  • 1 unwaxed orange

Preparation

  1. Prepare the sweet potatoes (8 min)
    Peel and cut the sweet potatoes into wedges or large cubes to keep some tenderness after cooking.
  2. Add vanilla, oil and spices (5 min)
    Mix the oil with the vanilla seeds, a touch of cinnamon, the salt and the pepper, then coat the pieces.
  3. Roast until caramelized (30 min)
    Roast, turning once, to get nicely colored edges and a tender center.
  4. Finish with combava and zest (2 min)
    Add the combava and a little orange zest just before serving to keep the freshness.
