Frost on a vanilla bean: vanillin, never mould
Quick answer: the white specks on a vanilla bean are crystallised vanillin, drawn from the heart of the bean up to its surface. They are dry, glossy and geometric, and the bean smells of vanilla more strongly than before. Mould, by contrast, forms a dull fuzz in round patches, with a musty smell. Frost is edible. It is even sought after.
1. What you are looking at
It is the question we hear most often, and the one that sends parcels back to us. A tube opened after a few weeks in the cupboard, and there is white powder running along the ridges. The worried reflex is understandable.
It is unfounded. The molecule you are looking at is called vanillin, 4-hydroxy-3-methoxybenzaldehyde by its full name: the main aromatic compound in vanilla, the one that carries the scent everyone recognises. In its pure state it takes the form of white needle-shaped crystals and only melts at around 81 to 83 °C. In your kitchen it is therefore solid: when it reaches the surface of a bean, it stays there, crystallised.
The trade name for it, in the SAVA region, is frost. The word says what the eye sees: a glittering film, like the morning hoarfrost on a length of wire.
2. Why vanillin comes out of the bean
Vanillin exists neither in the flower nor in the green bean. It forms during post-harvest curing: scalding in hot water, sweating in wooden boxes, days in the sun and nights under blankets, then several months of ageing in trunks. At the end of that journey, a well-aged Bourbon bean commonly contains 1.5 to 2.5% vanillin on a dry-matter basis and keeps between 25 and 35% moisture.
That residual moisture is the carrier. When the bean goes through changes in temperature, or simply ages in its tube, some of the internal water migrates outwards, carrying dissolved vanillin with it. The water evaporates at the surface; the vanillin cannot: it stays behind and crystallises. Frost is the deposit left by a movement of moisture.
Two observations from the field follow. Frost appears on rich beans: no deposit without a reserve to deposit. And it appears with time, which is why a bean that was bare in January can be frosted in June without anything having gone wrong. Our storage rules are in the storage and preparation guide.
3. Crystal or mould: what really sets them apart
Five criteria are enough, looked at together rather than one at a time.
Shape. Frost is geometric: fine needles, flat flakes, sharp edges under a ten-power magnifying glass. Mould is fuzzy: tangled filaments, a cotton or velvet look, no edges at all.
Sheen. The crystals are glossy and catch the light as you turn the bean. Mould is matt and absorbs it.
Colour. Frost is white, sometimes ivory or amber. Mould turns green, grey or bluish. One caution, though: white, cottony moulds do exist, so colour alone is not enough.
Pattern. Frost follows the bean: it settles along the ridges and folds, in linear streaks, often concentrated at the ends. Mould follows nothing: it starts from a point and spreads in round patches, typically where two beans touch or where the tube did not close properly.
Smell. The criterion that never lies. A frosted bean smells of vanilla more strongly, with notes of cocoa and prune. A mouldy bean smells musty, of cellar and mushroom. If your nose says "damp and stale", the doubt is settled.
4. Three tests to do at home in one minute
The finger test. Gently rub the deposit. Frost crumbles into dry powder and disappears under your fingertip. Mould leaves a damp mark, slightly greasy, and grows back.
The alcohol test. The clearest of all, based on a simple property: vanillin is highly soluble in alcohol and barely soluble in cold water. Put a drop of neutral spirit, vodka or white rum, on the white area. The crystals dissolve within seconds. A felt of mould, on the other hand, clings and stays visible.
The flexibility test. A healthy bean, frosted or not, wraps around your finger without snapping. A bean under attack turns soft in places and gives under pressure. Our guide to choosing Bourbon vanilla well covers the other buying criteria.
5. Why frost is a sign of richness
A bean cannot deposit on its surface what it does not hold inside. Frost requires three conditions to come together: full ripeness on the vine, curing carried through to the end, and sufficiently long ageing. Vanilla harvested too early, dried in a hurry and shipped straight away does not frost, for lack of substance.
The phenomenon is therefore seen more often on the larger sizes, the ones that had the most time on the plant: our L beans, 16 to 18 cm, and XL beans, 19 to 20 cm, frost more readily than the S beans of 10 to 12 cm. An honest note: frost cannot be ordered and cannot be guaranteed. We do not sell "frosted vanilla"; we sell well-aged vanilla, on which frost sometimes ends up appearing.
6. What our family does to get there
Our family grows vanilla in the SAVA region, in the north-east of Madagascar. Every flower there is pollinated by hand, one by one, on the single morning it opens. The bean then stays roughly nine months on the vine, followed by six to nine months of curing and ageing before sorting by size and packing in tubes.

7. Cooking with a frosted bean
Nothing changes, except for the better. Do not rinse the bean: you would be washing away its most aromatic part. Split it, scrape out the caviar, and put everything into your preparation, crystals included. They melt as soon as they meet something warm, cream, milk or butter, and dissolve just as well cold in a spirit or a syrup.

8. And if it really is mould
It happens, usually after a stay in the refrigerator or in a container that was not properly closed. The cold is the classic false good idea: each time the bean comes out, the warm kitchen air condenses on its cold surface, and that water feeds mould.
If the fuzz is confined to one bean and the rest of the batch is healthy, set it aside and check the seal of the tube.
