Vanilla scones with vanilla sugar

We keep a very simple format, but push the precision on texture and finish to get a scone that splits well, spreads well and stays elegant even served plain.

Ingredients

Scone dough

  • 300 g flour
  • 2 tsp baking powder
  • 1 pinch fine salt
  • 40 g Bourbon vanilla sugar
  • 75 g cold butter
  • 1 egg
  • 12 cl whole heavy cream
  • 0.5 Bourbon vanilla bean

Method

  1. Rub in the butter (6 min)
    Mix flour, baking powder, salt and vanilla sugar, then rub in the cold butter with your fingertips.
  2. Add the egg, cream and vanilla (5 min)
    Add the egg, the cream and the vanilla seeds. Mix just enough to form a supple dough.
  3. Shape and cut (6 min)
    Roll out the dough without overworking it, then cut thick scones to keep a nice height.
  4. Bake until golden (12 min)
    Brush lightly with cream and bake until the scones are puffed and nicely golden.
