Roasted sweet potato with vanilla and combava
Roasted sweet potatoes, glossy and melting, lifted with vanilla and kaffir lime for a very distinctive side dish that is easy to love.

- 900 g sweet potatoes
- 3 tbsp neutral oil
- 1 Bourbon vanilla bean

- 1 untreated orange

Prepare the sweet potatoes (8 min)
Peel and cut the sweet potatoes into wedges or large cubes to keep them melting after roasting. -
Add vanilla, oil and spices (5 min)
Mix the oil with the vanilla seeds, a hint of cinnamon, the salt and pepper, then coat the pieces. -
Roast until caramelized (30 min)
Roast, stirring once, for well-browned edges and a melting center. -
Finish with kaffir lime and zest (2 min)
Add the kaffir lime and a little orange zest just before serving to keep the freshness.
