Roasted carrots with vanilla and combava
Roasted carrots, lifted with vanilla and kaffir lime, for a luminous side dish.
The carrots keep their bite, the vanilla brings roundness and the kaffir lime wakes everything up.
Ingredients
Savory base
- 800 g carrots, preferably small or medium
- 2 tbsp olive oil
- 20 g butter
- 0.5 vanilla bean
- 2 pinches kaffir lime powder
- 3 pinches kaffir lime flavored salt
Method
-
Prepare the carrots (8 min)
Peel then halve or quarter the carrots depending on their size, for an even cooking. -
Roast gently (25 min)
Cook the carrots in the oil and butter. Add the vanilla partway through to perfume without pushing the dish toward sweetness. -
Season to finish (2 min)
Off the heat, add a touch of kaffir lime powder and the flavored salt. Taste, then serve at once.
Why this recipe works
Carrots, sweet yet vegetal, absorb a vanilla note well as long as the dosage stays very fine.
Mistakes to avoid
Do not add too much vanilla or too much kaffir lime. The dish must stay vegetal and savory, never dessert-like.
Storage and serving
These carrots can hold for a few hours and be gently reheated. Do the kaffir lime finish at the end.
Tips
- Savory vanilla: Always stay below the dessert threshold: the vanilla should support, never dominate.
- Kaffir lime: One pinch is enough. The goal is to bring lift, not to saturate the recipe.
