It is the berry of \u003cem\u003eSchinus terebinthifolius\u003c\/em\u003e, a tree of the cashew family, a cousin of the mango and the cashew nut. It does not belong to the genus \u003cem\u003ePiper\u003c\/em\u003e, the genus of black, white and green pepper.\u003c\/p\u003e\n\u003cp\u003eIts skin is thin and brittle: it bursts rather than grinds. The taste is sweet and fruity, slightly resinous, with a barely peppery finish. It is a finishing spice, not a base spice.\u003c\/p\u003e\n\u003ch2\u003eOrigin\u003c\/h2\u003e\n\u003cp\u003eOur family grows and harvests these pink peppercorns in Vangaindrano, in the south-east of Madagascar. The clusters are cut by hand, dried naturally, then stripped and sorted by hand. Our vanilla comes from the SAVA region, in the north-east of the island: two terroirs, two harvests.\u003c\/p\u003e\n\u003ch2\u003eIn the kitchen\u003c\/h2\u003e\n\u003cp\u003eAdd it at the end of cooking or as you serve, whole or crushed between your fingers.
